Ancel Benjamin Keys (January 26, 1904 -- November 20, 2004) was an American scientist who studied the influence of diet on health. In particular, he hypothesised that different kinds of dietary fat had different effects on health.
In addition to his role in establishing modern cardiovascular disease (CVD) epidemiology, Keys was closely associated with two famous diets: K-rations, formulated as balanced meals for combat soldiers in World War II; and the "Mediterranean diet", which he popularized with his wife Margaret. Science, diet, and health have been central themes of his professional and private lives.
Early life
Keys attended the University of California, Berkeley, where he received a B.A. in economics and political science (1925), an M.S. in biology (1929), and is a '30 University of California, San Diego Alumus receiving a Ph.D. in oceanography and biology from the Scripps Institution of Oceanography.[1] He earned a second Ph.D. in physiology at Cambridge in 1938. In 1936, he became a professor at the University of Minnesota, where he established the Laboratory of Physiological Hygiene. Keys directed the laboratory from 1939 until his retirement in 1975.
Professional
During World War II, Keys studied starvation and sustinence diets using 32 conscientious objectors from Civilian Public Service as test subjects in the Minnesota Starvation Experiment, and eventually producing his two-volume Biology of Human Starvation (1950).[2] His interest in diet and CVD was prompted, in part, by seemingly counterintuitive data: American business executives, presumably among the best-fed persons, had high rates of heart disease, while in post-war Europe, CVD rates had decreased sharply in the wake of reduced food supplies. Keys postulated a correlation between cholesterol levels and CVD and initiated a study of Minnesota businessmen (the first prospective study of CVD),[3] culminating in what came to be known as the Seven Countries Study.[4] These studies found strong associations between the CVD rate of a population and average serum cholesterol and per capita intake of saturated fatty acids. Then, as now, critics have rightfully pointed out that this "strong association" vanishes when data from other countries are added to the mix and there have been allegations that Keys "cherry picked" the data to support his hypothesis.
From the early 1950s, Keys actively promoted his findings to an increasingly health-conscious public. The resulting "cholesterol controversy" revealed sharp divisions in post-war scientific culture over whether the statisticians' "strong associations" could provide scientific certainty. In its simplest form, the debate over dietary fat and CVD pitted "interventionists" against those calling for further studies--preferably clinical or laboratory studies. While Keys was able to convince the US government to promote his idea that reducing the intake of fat would reduce the incidence of CVD, what happened in the intervening years when Americans took this advice indicates that Keys' basic premise was wrong. While consumption of dietary fat decreased from the 1960s to the 1990s, the rate of CVD did not change substantially and the incidence of obesity and Type II diabetes soared.
Keys was always considered an interventionist. He generally shunned food fads and vigorously promoted the benefits of "reasonably low-fat diets," instead of following "the North American habit for making the stomach the garbage disposal unit for a long list of harmful foods."[citation needed] Keys' studies and recommendations have had a substantial impact on changes in the U.S. diet[citation needed] that may have caused a downward trend in CVD.[1] although several recent studies of low-carbohydrate diets, essentially the opposite of Keys' recommendations, have show that these diets are more effective at improving markers of CVD than low-fat diets. Because of his influence in dietary science, Keys was featured on the cover of the January 13, 1961 issue of Time magazine.
Ancel Keys died of old age on November 20, 2004, two months before his 101st birthday.[5]

Lightning Complains on the Way to the Vet

Lightning is quiet vocal as we cross the Atchafalaya early this morning to go to a vet in Baton Rouge to have another round of lab work done. Lightning is still underweight since she had liver problems. But, her blood and urine work today was much improved from her initial lab work. Her bilirubin level is still elevated, but not as much as it was before. Her protein is a little high. But, everything else is better then it was. Everything in her exam looked good. He recommended keeping her on the Science Diet Rx L/D food, and seeing if she puts on some weight. If she does not gain weight in the next 4 to 6 weeks, then he recommends running the lab work again to see where she is at. The only diagnosis he could give was possible hepatitis.

Zoey the cat

Zoey is a beautiful green-eyed girl-cat who was turned over to the shelter for the simple crime of clawing at the carpet. She is so friendly and easy to handle that we have to wonder why Zoey never had her claws trimmed regularly. (Learn how to trim cat claws here). Zoey can best be described as a double-tabby with movie-star green eyes and a white bib. She's still only 2-1/2 years-old but she looks much younger. Her former owner describes Zoey as very friendly and playful. In fact, Zoey likes every kind of toy. Wouldn't you just love to take her home buy Zoey a few cat toys? She does fine with dogs, other cats, and children. She's been brought up on Science Diet dry food and weighs in at a petite 9 pounds. Despite being a little bit unsettled and apprehensive, Zoey lounged in her litter box purring loudly during her recent photo shoot.

Loofah the cat

Loofah, as she was known, was recently surrendered to the shelter for no apparent reason. She is 18 months old and her owner describes Loofah as friendly, quiet, and active. She is spayed and declawed, and is an indoor cat (as all cats should be!). She used to eat her dry Science Diet at 11 a.m. and 6 p.m. and has no bad behaviors at all! Specifically, she does not bother house plants, or leave messes, or damage home furnishings, or do anything else that would make her less than a highly desirable cat. She is a beautiful gray cat with eyes that shine like polished jade. If Loofah is fortunate enough to find a new owner, we hope she will never have to go through this again.

The book is very well-organized and divided up so that you can easily access information later while going through the fitness and nutrition plan. There are great demos of exercises and detailed explanations to ensure proper form which is key. It really couldn't be easier--this book tells you what to do, how to do it and when!
I did feel a bit 'bored' with the lengthy information leading up to the actual plan itself. I had to resist just skipping through the introduction and going straight to the good stuff-the exercises and nutrition plan. I felt there was a lot of explanation as far as what the plan WASN'T and what they wouldn't make you do, which seemed like a waste of space.
Overall, I think this is a great book with wonderful information on fitness and nutrition, though I do feel it was geared primarily towards beginners to weight lifting. This book now sits on my shelf, but I know someday I'll go back and re-read.

Customer Review: This book is disorganized and unstructured. I guess this is a result of self publishing, in that there is no one there to edit the finished product.
The basic theme is to cleanse your entire body and to not take any prescription drugs. On the one hand I find Kevin's fight against the FDA admirable. It may open the eyes of people who had no idea that FDA all about the money. But on the other hand I can't help but wonder if his black-and-white thinking is clouded by his scientology beliefs. He does praise scientology in this book.
Some of his ideas seem illogical and unsubstantiated. I am a huge fan of alternative medicine, and I am all for books that educate the general public about various options. But this book doesn't do a very good job. There are some good ideas here and there, but the entire book reads like a list of his thoughts and ideas... without structure.

Customer Review: What a fascinating book. I'm a consultant who travels and eats out a lot, and I considered myself to be a casual foodie. Let's just say that ignorance may be bliss with regards to where the edibles come from, the definition of organic, the nasty details of slaughter houses, etc. I also found the background information on farmer incentives and economics interesting (particularly in the wake of the current prices of wheat). I feel I should have known much of this, but I didn't - and I found it to be great reading. I liken this to "Kitchen Confidential" in some ways (in terms of value of content for foodies, not tone). Eating is a part of all of our lives, yet we take the proverbial making the sausage part for granted. As an aside, I got the Kindle edition and found that the price was better than what I found in local bookstores.

What the author manages to accomplish is nothing short of remarkable- chronicling one week of food consumption in a number of families around the world. The text is well-written and informative, but it's the photographs that speak the loudest. To compare the weekly food consumption of a US or German family with that of a Sudanese or Mongolian family is haunting and recalibrates what we take for granted. Highly recommended.

Customer Review: I must admit that I found the subject matter of this book fascinating yet at the same time scary. The author did a wonderful job of breaking down all of the technical jargon which mystifies the ingredient list of most of our modern day products. I for one was shocked by how much of my food is mined. Yes, mined!!!!
This book does a great job of detailing the history and alternate uses of all the ingredients of the Twinkie and some of the uses, such as explosives and chlorine gas are very scary indeed. The only down side, and it's a minor one, is that this book can get a bit and you get the feeling the author is writing to other chemists and not to a mass audience. I would recommend an appendix for the paperback version which summarizes the different chemicals and what not put into the Twinkie. All in all a very good and necessary book.
