Customer Review: What I found most fascinating in this very thick and technical book was how the personalities wielding the "science" made the difference in where we, as a nation, ended-up today. It was almost "riveting" to read about how one scientist could get a huge audience with a weak theory and no evidence, while another scientist with a decent theory and plenty of evidence couldn't get anyone of any prominence to even comment. It made me wonder about a lot of what we take for scientific "truth" today. Hanging on to your pet theory to reduce cognitive dissonance is, I'm sure, as popular today in all science as it was shown by Taubes to be in the last hundred plus years of nutrition science.

What I thought about, but wasn't mentioned in the book, was that carbs have a long shelf life, good for an era when the Soviets were pointing nukes at us (and we were convinced that they might just push the button). Another thought that occurred to me that helped explain the cascade of ideas toward the "low fat" chasm is that lots of people, not just vegetarians, think it's sort of gross to eat animals. So not only did we have supposed "scientists" with their pet theories, we also had a lot of people that "wanted to believe" because it made them feel safer or less like a beast. We are where we are. We can only hope that more people accept the research Taubes presented, and act accordingly.

Customer Review: I just described myself in the title of this review. I'd lost 45 lbs. doing Atkins 6 years ago, when my kids were small and had no actvities to go to. I gained it back towards the end of pregnancy 4 years ago.

I've known I needed to get it off, but now the first kids are in multiple activities, and it's very rare for us to get home before 7:30 p.m. With normal cooking styles, we'd be lucky to eat by 8 or 8:30! NOT good. And, when I'm tired, it just takes me that much longer to cook.

Last summer I made a serious effort and lost most of it again. But I couldn't find a variety of recipes, and when my kids' activities started up again this year, I had to stop, and (of course) gained most of it back. Low-carb truely IS a lifestyle, and I wasn't following it. I couldn't.

This spring, after experiencing danger signs in my health, I started looking around for a good low-carb cookbook to fit our family lifestyle. I decided I needed to have dinner ready when we finally walked in the door, so that meant getting a good programmable slow-cooker with a keep-warm function.

So many cookbooks SAY low-carb, but they aren't really. They're low-fat/low-carb (DANGEROUS when combined with low-carb), or their idea of low-carb is in one meal what people in Induction can eat in 3-4 days. I bought one slow-cooker book from another author, and out of the whole book, there were only 2 recipes that I could use! I returned it.

So I was thrilled to find this cookbook! Most recipes come in at under 10 carbs; many lower than 6. I can use most of them right now, in Induction!

AND: my kids love these recipes! Not a strike-out yet. We've used it nearly nightly for almost 3 weeks. They loved Roman Stew and Chicken with Creamy Horseradish Sauce (it's very, very mild horseradish flavor); they gobbled down Orange Teriyaki Chicken. Even the Pork Neckbones with Cabbage and Turnips was a hit! The Balsamic Beef was the first thing I made, and they wanted seconds and thirds.

In addition, the nutrition information is good. Nice to be able to see if you're not only getting a low enough number of carbs, but enough fat and protein to boot!

Atkin's book is easily one of the best books ever written on low carb dieting. The three books I recommend my patients read are Atkins, Protein Power, and of course my own :-)

Unfortunately most physicians will never read this book and if they do they will dismiss it as an opinion, not based in fact. For some reason, the scientific method is not followed in dietary clinical trials. The scientific method should be: I have an idea (theory, supposition, opinion, hypothesis whatever you want to call it), I perform an experiment to either prove or disprove my idea; if I prove my theory-great-look how smart I am. But if the results do not prove my idea, I am supposed to re-evaluate my initial idea, not call the experiment flawed or the results inconclusive.
The reason the dietary clinical trials appear contradictory is because the researchers in these trials start off with a conclusion--not an idea-- perform an experiment, and when the results of the experiment do not support what the researchers already 'think' they know; they now call the experimental design flawed or the results inconclusive, which is generally not the case.

I have literally treated thousands upon thousands of my patients with low carb diets over the last decade. I love when the labs come back with higher HDLs, lower triglycerides and normal blood sugars. I love teasing my patients and ask if they are eating more fat and cholesterol. When they say yes, I ask them "Well, if you are eating more fat and cholesterol, then why did your fat level drop and why did your HDL rise, and why did you lose weight?" I always get a smile back, because my patients know what I am getting at. And what I'm getting at is the fact--and I mean FACT, that low cholesterol, low fat diets DO NOT WORK to any degree to help people stay off or reduce their medications.

Customer Review: I can't say I've lost 10 pounds in a month or anything like that. I am not completely sure I've lost more than a few pounds over the past few months that I have been using the advice in this book. What I can say, however, is that since starting to eat according to these guidelines, I have been feeling much better.

I have more energy and I am happier overall since I've learned to balance carbs with protein. It's amazing how much what you eat can affect your mood, not just over a long period of time, as your health changes, but also just in the span of one day. Whenever I eat too much sugar, for example, and don't balance it, I can feel the side effects of that pretty soon.

I recommend this book to anyone who suspects that they are insulin resistant. It will give you explanations that make sense, rules that are reasonable and an overall guide to adapting your diet to your body's needs.
