The process of turning whole wheat into white flour strips away the B vitamins as well as vitamin E, calcium, zinc, copper, manganese, potassium and fiber. Highly processed white flour lacks the two most nutritious and fiber-rich parts of the seed: the outside bran layer and the germ (embryo). Don't be fooled by the words “enriched flour.” The “enrichment” process adds back only four of the 15 vitamins and minerals lost along with the fiber and antioxidants. A diet high in foods containing white flour leaves people malnourished, constipated, lethargic, and more susceptible to chronic illnesses.

Transfats

You need some fat in a healthy diet because it provides essential fatty acids and helps your body absorb vitamins A, D, and E.

Fats and oils are made mostly of fatty acids. They come in four main kinds: monounsaturated, polyunsaturated, saturated, and trans. Most fats and oils contain a mixture of all four, but such mixtures usually have a higher proportion of one type or another.

Polyunsaturated and monounsaturated fatty acids can lower your risk of heart disease. They are the healthier fats and should be part of your diet. Polyunsaturated fatty acids occur in many common vegetable oils such as those made from soybeans, flax, corn, and sunflower seeds. They are also available in fatty fish such as salmon, herring, mackerel, trout, and smelt, and in such foods as flaxseed, sunflower seeds, soybeans and walnuts.

Monounsaturated fatty acids occur in canola oil, olive oil, sunflower oil, avocados, and certain nuts, such as cashews, pecans, almonds, and peanuts.
